RECIPE – Peppered Shrimp

Serves 2
Ingredients
- 2 lbs Head-on Shrimp
- 2 Tbsp Red Crushed Chili
- 3 cloves of Garlic
- ¼ Cup Salt
- 1 Tsp Whole allspice berries (Pimento Seed)
- ¼ Cup Vinegar
- 3 Sprigs Thyme
- 4 Cups Water
- For Saute
- 1 tbsp Butter
- 1 whole Scotch Bonnet Pepper sliced
Preparation
- Bring water, Red crushed Chilli, vinegar, garlic, salt, pimento and thyme to a boil. Let simmer for 20 minutes.
- Add head-on shrimp to the pot and cook for 3 minutes. Drain (save liquid) and set shrimp aside.
- Saute shrimp with remaining scotch bonnet pepper and butter on medium heat. Serve!
