How to make pancakes from scratch: Buss Belly Pancakes

Recently I got out of bed with a strong craving for pancakes. It was kind of strange because I would not consider myself to be a pancake lover. When I do try pancakes, I go for pancake mix and I typically eat one or two then I’m no longer interested. It just doesn’t take great. This time, however, I had no pancake mix and I was on the hunt to figure out how to make pancakes from scratch to satisfy the craving.

Well, I researched, discovered the basics and whipped up what I call BUSS BELLY pancakes. My long time subscribers know that I am Jamaican but if you’re new here, in Jamaican parlance, BUSS BELLY describes being extremely full.

The pancakes will definitely buss your belly! They are hearty, savoury and easy to make. Here’s the recipe.

BUSS BELLY Pancakes Ingredients

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon brown sugar
1 1/4 cups milk of choice
1 egg
3 teaspoons vanilla
3 tablespoons butter or margarine, melted

How to make BUSS BELLY Pancakes

Step one
Sift flour, salt and baking powder together.

Step two
Add sugar, combine and set aside

Step three
Beat egg & add vanilla

Step four
Make a well in the centre of the mixture then add milk, beaten egg + vanilla mixture and melted butter and combine.

Step five
Lightly grease a non-stick frypan or griddle with margarine or butter, use 1/4 cup measure to scoop pancake mix, brown each pancake on each side, stack and serve hot.

This batter makes 10 pancakes and goes well with eggs and sausage. Don’t forget your favourite syrup!
