Creamy Callaloo Dip

Creamy Callaloo Dip Ingredients
- 1 lb of fresh Callaloo (1 can if fresh is not available)
- 2 Tbsp Canola Oil
- 4 oz Cream Cheese
- ¼ Cup White Cheddar Cheese shredded
- ¼ Cup Heavy Cream
- 1 small Onion, chopped
- 2 Garlic Cloves, fine dice
- 1 tsp Black Pepper
- ¼ Cup Parmesan Cheese shredded
Method
- Thoroughly wash and chop Callaloo.
- Add oil, onion and garlic to a pot on medium heat, sweat for 2 minutes. *Be sure not to burn the garlic.
- Add callaloo to the pot and cook for 5 minutes.
- Add cream cheese, black pepper and heavy cream to pot, stirring occasionally.
- Once all combined, remove from heat and add white cheddar cheese and parmesan cheese.
- Serve hot.
Pro Tip: To add freshness, chop fresh tomatoes and place on top, add more parmesan cheese (because you can never have too much cheese). This can be served with Pressed Green Plantains, tortilla chips or plantain chips.
