If I could make a guess right now, I would say somewhere on your counter in your kitchen or even in your refrigerator are about 5 bananas left from the bunch that was bought over the weekend at the market. Their skins probably have already gotten spotted due to them being overripe and they more than likely have started getting soft. The next step for you is to throw them out when the fruit flies start coming around. Right? Wrong!!
Bananas are one of the best fruits to incorporate into something yummy especially when they have started “going bad”. They make the best fritters and banana bread – my favourite! I’m all about the delicious baked goods that allow me to keep my “coins” and this recipe is just that!
This budget-friendly recipe will definitely have you gobbling down banana bread every week and the best part is, you may already have most if not all the ingredients in your pantry. If not, don’t worry, there is a grocery list at the end of this recipe to help you gather your ingredients without emptying your piggy bank.
Nutty Banana Bread
Yield: 2 mini loaves or 1 loaf (9.25 long x 5.25 wide x 2.75 deep)
Prep Time: 10 minutes
Bake Time: 55-60 minutes
Nutty Banana Bread Ingredients
- 3 medium or large ripe bananas
- ½ cup (8 tablespoons) unsalted butter at room temperature
- 3/4 cup (162g) granulated sugar
- 2 large eggs (lightly beaten)
- 1 ½ cups (186g) all-purpose flour, sifted.
- 1 teaspoon (4g) baking soda
- ½ teaspoon vanilla
- 1 cup (101g) pecans
- ½ cup (52g) raisins
Nutty Banana Bread Method
- Preheat your oven to 350°F (176°C). Grease and flour loaf tin(s) and set aside.
- In the bowl of a stand mixer or using a hand mixer, cream sugar and butter together until light and fluffy.
- Add mashed bananas, eggs and vanilla to batter and mix well. Bananas should resemble chunky baby food after being mashed with a fork.
- Whisk together (or combine with a fork) all dry ingredients in a separate bowl then add to banana batter and mix well until no dry ingredients are visible. DO NOT OVER MIX!
- Add the pecans and raisins then fold into batter until combined using a rubber spatula or a wooden spoon. If you’re not a fan of nuts or raisins, you can leave them or replace them with chocolate chips.
- Pour batter into your prepared mini or large loaf tins then bake at 350°F (176°C) for 55-60 minutes or until a toothpick comes out clean and the loaves spring back when touched. Check loaves at 50 minutes as all ovens are different which can affect your baking time.
- Once baked, allow the loaves to cool in their tins for up to 10 minutes before transferring to a cooling rack.
- Slice and enjoy!
